There is nothing that screams summer more than watermelon! I love finding new recipes to test out with my crew and this one did not disappoint. It is refreshing and the perfect combination of sweet and salty – also so easy to put together!

What You Need (serves 4-6):
- 1/2 small watermelon chilled
- 100g of feta
- A handful of shelled pistachios coarsely chopped
- 2-3 tbsp of olive oil
- Seasalt flakes
- Freshly ground pepper
What to do:
- Thinly slice watermelon and place on a serving platter
- Sprinkle feta over the top
- Top off the dish with chopped pistachios
- Salt and pepper
- Serve ( the dish can stay in the fridge for up to a day – so makes a great prepare ahead dish)
