Blackberry Mint Fizz

Ingredients
  

  • 4 Meyer Lemons
  • 1 small crates of blackberries (about a dozen berries)
  • 1 box of mint leaves (you’ll need about 5 sprigs)
  • 1/3 cup Agave or a homemade simple syrup
  • 8 oz Gin, vodka or tequila
  • Sparkling water or Tonic
  • Champagne
  • Ice

Method
 

  1. Freshly squeeze 4 Meyer lemons. I love this press to quickly squeeze without the mess.
  2. Muddle a big handful of blackberries (10 or so) and the leaves from 5 sprigs of mint into a mortar and pestle.
  3. Add lemon juice, agave, blackberry, mint and gin (or vodka) to a cocktail shaker and toss in a few ice cubes. Shake thoroughly.
  4. Pour into a pitcher, add sparkling water or tonic water and stir.
  5. Fill each glass with ice and divide the mixture up divide mixture from shaker. I topped my drinks off with a splash of champagne.
